Creamy Choco Mousse

Ingredients:



2 cups coconut milk, freshly squeezed

2 teaspoons vanilla extract

2 tablespoons erythritol

2 tablespoons cocoa powder, sifted

Cocoa nibs for garnish

Directions:



Place the coconut milk, vanilla extract, sweetener, and cocoa powder in the Instant Pot.

Press the “Sauté” button and allow to simmer for 10 minutes.

Pour into the ramekins and allow to set in the fridge for an hour.

Garnish with cacao nibs before serving.
